HOW TO PREPARE BEANS STEW AND RIPE PLANTAIN

Beans stew and fried plantain

Ingredients

  • Beans
  • Palm oil
  • Fresh tomatoes
  • Onion
  • Pepper
  • Ginger
  • Garlic
  • Salt
  • Salmon
  • Vegetable oil
  • Ripe Plantain

Method

Wash and soak beans for about 45- 50 minutes.

Then boil the beans for one and half hour till it becomes soft. When its well cooked, drain it with a colander or a strainer. Put the beans aside.

Wash all the vegetables. Blend or grind the onion, tomatoes, garlic and ginger, remove the bones in the salmon and wash it with small water.

In a saucepan heat the palm oil

add chopped onions and saute. Then add the blended vegetables and stir. Cover it and stir continuously. When the oil settles on top, break the salmon into smaller pieces, add it to the stew and stir.

Add salt,lower the heat and cover it for about 5 minutes.  Then add the beans and stir. Leave it for about 2-4 minutes and serve.

Peel and cut the plantain.

Wash in salt water, heat vegetable oil and fry the plantain. Fry until it turns brown and serve.

Serve with rice or gari.
