Banku and okro stew are one of my favourite meals. Banku goes with all soup, stew and sauce but we all know its original accompany meal, okro soup. Also, Banku is a Ghanaian dish. Which is cooked by a proportionate mixture of fermented corn and cassava dough.
Banku Dish and Okro Stew – African Cuisines
- Chopped okro
- Palm oil
- Diced Tomato
- Stock cube
- Cassava dough
- Corn dough
Wash the meat, blend ginger, garlic and onion. Add it to the meat in a saucepan and add stock cube, salt or any prefered spice and steam. You can also add small chopped onion. Cover it to steam.
Pour water in a saucepan, add the chopped onion and boil for about 15 to 20 minutes till it bubbles up.
Pour palm oil in a saucepan and saute the onion and the tomatoes.
Add the tomato paste and stir. Then add the blended ginger,onion,garlic and stir. Blend the pepper and 1 tomato. Add it to the stew and stir.
When the oil forms on top, add one stock cube and add the steamed meat together with broth and stir. You can add curry powder.
Wash the salmon, remove the bones and wash thoroughly. Add it to the stew and stir.
Add the cooked okro and stir gently. Reduce the heat, cover it and allow it to simmer.
How to prepare banku
First, wash your hands well. Mix the corn and cassava dough by mashing it with your hands.
Add a glass of water and mix it till there are no lumps.
Put it on fire and stir continuously with a wooden spoon, you will need more force to stir when it is getting thick. Use a napkin or cloth to hold the pot and knead it. Add another cup of water, add salt and turn it often.
When the water is down reduce the heat and knead the banku.
Do this for about 4 minutes. Repeat this process till its well cooked. Turn it a few times. Use a small bowl to shape the banku into preferred serving size.
Serve your banku with the okro stew.
